Recipes to Impress - Homemade Ricotta Cheese

Happy 2024 Taste Trailblazers! I hope Everyone had a great holiday. For the new year, I am starting a new category, Recipes to Impress. These recipes will still be easy and affordable, but they are so impressive they will wow even your most discerning guests or family members.

The first one is homemade Ricotta Cheese. Sounds intimidating right? What if I told you that you probably already have almost everything you need in your home already and is super easy to make! Would you give it a try? Believe it or not, a simple, light, Ricotta cheese can be made with only 3 ingredients:
1. Whole Milk (Full Fat)
2. White Vinegar or Lemons (I almost always use vinegar. I think it works better and I always have it on hand.)
3. Salt
Optional: For a creamier Ricotta, replace 1/4 of the whole milk with heavy cream.
The only thing you need that you may not have is cheesecloth but you can get that at almost any grocery store or order from Amazon.
Imagine how impressed your friends will be when you come to the table with a lasagna, stuffed shells or even a yummy crostini appetizer and casually mentioning it's homemade Ricotta!
She Loves Biscotti has an amazing website and has the recipe perfectly laid out for you and is super easy to follow.

Enjoy!

I have been cooking for friends and family for over 20 years. I am not a culinary school trained chef, it is just my true passion. No matter what curve balls life has thrown at us, I have always managed to cook comforting, satisfying meals no matter where we lived or what tight budget we were on. I hope that my recipes and budget tips will help others who love to cook realize they can still make incredibile meals in these challenging economic times we are living in.
