Meatballs in Cheesy Tomato Gravy (Served Over Mashed Potatoes)



Due to my unnatural love for them, often when I go to the kitchen to decide what I am going to cook, my mind automatically goes to "what can I pour over mashed potatoes today". That was what happened a couple of days ago when I decided to make this.

The cream cheese makes this sauce creamy and dreamy while the parmesan adds salty goodness. These two ingredients really take the sauce to whole new level. And if you have never put your meatballs in tomato sauce over mashed taters, you don't know what you are missing! I know it sounds weird but it is really tasty! Of course, you can use this recipe over pasta or rice as well.
I usually make a big batch of homemade meatballs and freeze them instead of using store bought ones. I will do that soon and post that recipe for you.
Meatballs in Cheesy Tomato Gravy Recipe
Ingredients:

1/2 bag of frozen store-bought meatballs (You can certainly make your own instead.)
1 32 ounce jar of spaghetti sauce
4 ounces of cream cheese
1/3 cup jarred parmesan cheese
Salt and Pepper to taste
Mashed Potatoes (or your favorite pasta)

Instructions:

1. Heat meatballs per bag instructions.
2. While meatballs are cooking, add spaghetti sauce, salt and pepper to a large sauce pan. Cook over medium heat for 7-8 minutes, until hot.
3. Add cream cheese and parmesan and stir until cream cheese has melted and has become one with the sauce.
4. Add meatballs to the sauce and cook for an additional 5 minutes.
5. Serve over mashed potatoes, pasta or rice.
Only 4 ingredients and basically just heating things up? How easy and affordable was this!
