Ramon Noodles with Ground Turkey and Vegetables



This is such a comfort food for me. The umami flavor is amazing but the greatest thing about this recipe is you can change up the protein and veggies to make it different every time. That being said, ground turkey, carrots and brussel sprouts are definitely my favorite ingredients to use in this dish. This is the one thing I can get my brother to eat that has brussels in it!

While it might be a little more involved than most of my recipes, it is still super easy and very affordable as half of the ingredients you probably already have in your pantry.

Ramon Noodles with Ground Turkey and Veggies Recipes

Ingredients:

1 pound ground turkey
3 packages ramen noodles (you can use any flavor. I usually use chicken or beef)
1 bag frozen brussel sprouts, cut in half.
3 packs of the small snack size bags of carrots (you can also use regular baby carrots they will just take a little longer to roast)
3 Tbsp. soy sauce (low sodium preferred)
2 Tsp. kosher salt
1 Tsp. ground black pepper
3 Cups Water
⅓ cup olive oil Olive or Vegetable Oil


Instructions:

1. Preheat oven to 400 degrees F. Place brussel sprouts and baby carrots on large baking sheet.
2. Drizzle ⅓ cup. of oil over vegetables. Sprinkle with salt and pepper then toss so everything is coated evenly. Bake for 35 to 40 minutes, flipping vegetables halfway through. You know they are done when they are browned and caramelized. Take out of oven and set aside.
3. Add ground turkey to a deep frying pan. Cook until evenly browned over medium heat.
4. Add 3 cups of water to a large bowl. Add only 1 and 1/2 packets of ramen noodle flavoring and 3 Tbsp. soy sauce to water and mix. Pour over browned turkey and heat to a low boil.
5. Break up ramen noodles into 3-4 smaller pieces and add on top of turkey mixture. Try to get the noodles down in the sauce. Cover for 4-5 minutes then stir. Repeat until all noodles are soft and mixed in evenly with the turkey. Remove lid and cook about 5 minutes or until most of the liquid is absorbed by noodles. (You can tell when the mixture starts barely sticking to the bottom of the middle of the pan.
6. Add in roasted vegetables and stir until evenly distributed and veggies are heated through, just a couple of minutes.

Tips:

- You don’t have to roast your vegetables. You can used canned if you want but you lose that awesome roasted flavor and texture..

-Adjust salt and pepper for your roasted vegetables to your liking. You can also add chopped onions and/or bell peppers if you like. Just saute them with the turkey when browning. The goal of my recipes is to make them as easy as possible and let you have fun by adding and replacing ingredients.

-Chopped green onions on top are delish!
