5-Minute Throw Together Crockpot Chicken Stew



I wasn't even going to post this recipe but it turned out sooooo tasty I had to do it!

I woke up this morning to a winter wonderful of snow. Beautiful of course, but there was no way to get the car out and up the street. My immediate thought was to throw something in the crockpot that would make the house smell awesome/comforting all day and would warm me up when I had it for dinner. The only problem was I haven't been grocery shopping, didn't have a lot of ingredient options, and no transportation.
I found 4 chicken breasts and a bag of frozen sweet potatoes in the freezer along with a half bag of baby carrots in the fridge, that is how this recipe was started. I threw my frozen chicken breasts and carrots (added sweet potatoes later) in the crockpot along with a few pantry staples and 8 hours later magic happened.
It literally took me 5 minutes to throw together this stew and I have to tell you it was fantastic! Warm, comforting and incredibly flavorful.

5-Minute Throw Together Crockpot Chicken Stew Recipe

Ingredients:
4 frozen chicken breasts
1 bag of cut up frozen sweet potatoes
1/2 bag of baby carrots
1 32-ounce carton of chicken stock
2 heaping tablespoons of tomato paste
1 Tablespoon of Worcestershire sauce
2 teaspoons dried onion flakes (onion powder will work but only add 1 tsp.)
1 teaspoon garlic powder
1 teaspoon pepper
1 teaspoon salt (I ended up adding more salt later so taste and salt to your liking)
A pinch of red pepper chili flakes (you can omit or add more to your heat level liking)
1/2 - 1 cup of instant potato flakes (If you don't have any you can sustitute them with a cornstarch slurry.)

Instructions:
1, Mix chicken stock, tomato paste, Worcestershire sauce and all spices/seasonings in crockpot.
2, Add baby carrots and frozen chicken.
3. Cook on low for 6 hours.
4. Add frozen sweet potatoes.
5. Continue cooking for another 2 hours.
6. Add potato flakes to thicken up the stew and continue cooking for 15-20 minutes. Start with adding 1/2 cup. If after the 15 minutes you want it thicker, add the remaining 1/2 cup.
It is great to eat on its own but I served mine over mashed potatoes. Rice would also be good or pouring a little over a slice of bread.
